All you need for this winning kids meal is a handful of healthy foods and fresh goodies from your kitchen. It takes about 30 minutes of your time and you’re looking at the most delicious snack for young and old. You can store in the fridge for up at least 5 days so you can consider making a larger portion. If that sounds like you or you have several hungry little creatures to feed, simply increase the quantities in this recipe to match the appetite!

Serves 1 Snackie of hummus & 24 crispbread squares Preperation25 minutes I Cooking25 minutes
INGREDIENTS
PUMPKIN CRISP BREAD
140g or ⅔ cups pumpkin purée
60g or ¾ cup rolled quinoa
70g or ½ cup pumpkin seeds
30g or ¼ cup sesame seeds
1 egg
½ tsp salt
BEETROOT HUMMUS
300g or 2 ¼ cups baby beetroot, peeled and cut into chunks
200g or 1 cup chickpeas, cooked
Juice of half a lemon
1 clove garlic, peeled and crushed
3 tbsp tahini
1 tsp cumin
Salt and pepper
60ml or ¼ cup olive oil
METHOD
PUMPKIN CRISP BREAD
Preheat oven to 170C and line a baking tray with baking paper.
Combine all ingredients in a bowl. Place the dough onto baking paper and spread out evenly and as thin as possible using the back of a spoon.
Bake in the oven for 20 - 25 minutes.
Cut into squares straight after taking out of the oven and allow to cool before eating.
BEETROOT HUMMUS
Preheat oven to 170C. Line a tray with baking paper and lay out beetroot.
Drizzle with olive oil and roast for 20 - 25 minutes or until soft. Set aside to cool.
In a high-speed food processor, combine all ingredients (except olive oil) until you have a smooth paste.
Slowly drizzle oil into dip and mix again until desired consistency is achieved.
Season to taste and serve in your favorite Snackie.
